Wine Production Line

The wine production process can be roughly divided into the following key steps


1. Grape sorting: select high-quality grapes and remove stems, then use a crusher to crush the grapes to facilitate subsequent fermentation.

2. Additives and fermentation: add yeast, pectolytic enzymes and other additives to the crushed grapes. Different countries and products may use different fermentation agents; customers should use fermenting agents that match their production formula.

3. After complete fermentation, separate and press the must. On this basis, the wine will undergo secondary (malolactic) fermentation.

4. Finally, through clarification and filtration, a primary wine product can be produced.

What equipment is needed in a wine production line?


1. Grape pre-treatment: place harvested grapes on a vibrating grape sorting machine to remove impurities and stems, and to eliminate underripe and rotten grapes.

2. Destemmer-crusher: after raw material selection, use a destemmer-crusher to break the grapes so skins and pulp mix with juice and promote contact between juice and yeast for fermentation.

3. Fermentation tanks: during fermentation, must (pulp, juice and skins) is mixed and held in fermentation vessels. Prior to fermentation, appropriate yeast strains are added; different wine regions and winemaking philosophies use different yeasts. Stainless-steel fermentation tanks (SUS304 or SUS316) are the market preference; they are equipped with sterile air vents or sterile positive-pressure fermentation systems; have dimpled or labyrinth-style jackets for circulating heating or cooling media. Tank capacities range from about 300–50,000 L. During fermentation winemakers choose maceration methods (cold soak, hot maceration, CO2 maceration, etc.) based on grape variety to extract color and flavor.

4. Press: after alcoholic fermentation, the fermented must is pressed. Press types can be chosen according to wine style, e.g., bladder presses or membrane/plate presses.

5. Secondary fermentation / maturation vessels: nearly all red wines undergo malolactic fermentation, which softens acidity and enhances aroma. For aging, winemakers select different containers to achieve desired styles: neutral large oak barrels for subtle integration, new oak for added complexity and structure, or stainless-steel tanks to preserve fresh fruit character.

6. Filtration systems: plate-and-frame filters, membrane filters, or diatomaceous earth disc filters can effectively remove suspended solids and improve clarity. If tartrate stability is needed, cooling (cold stabilization) can be applied.

7. Bottling production line: a fully automatic wine bottling line typically includes depalletizer, rinser, filler, corker/closure machine, dryer, automatic capsule applicator, heat-shrinker, labeler, carton former, case packer, case sealer, palletizer and strapping machine. The core machines are the rinser, filler and corker; these can be combined into an integrated unit enclosed in an acrylic cover with air sterilizer, with fully automated electromechanical control.

8. CIP (Clean-In-Place) System:The system automatically selects the CIP tank, opens the corresponding control valve, and fills water until the preset liquid level is reached, then automatically closes the valve.
